You could even spice it up a little more than normal by throwing in some ground star anise to boot.

Really, pumpkin pie mix is just pumpkin, spices (cloves, cinnamon, nutmeg), a bit of sugar, and…maybe some oil? I don’t think so, though.
You can easily do this with canned pumpkin, and just add those spices.

I don’t see why you can’t remove the chips from this recipe. You may want to add just a bit more sugar though, or sprinkle it on top of the cookie dollops before they bake to give the Snickerdoodle style topping.

I wanna try this but without the chips, do you think that would be good? Kind of like a snickerdoodle/sugar cookie type thing but with a pumpkin flavor.
