Sockeye or Alaska King is the best (Sockeye for flavor, King for firmness). Coho (which most &quot;wild Alaska salmon&quot; from places like Wal-Mart is) can be used for things like salmon jerky, or catching bigger fish! And the less said about Atlantic salmon, the better! :-)

Now...off to Whole Foods and a &quot;gotta-try&quot; for this recipe sometime in the next couple of weeks.

		<description>I made this the other night and it was absolutely delicious.  Actually I made honey+mustard salmon, not honey mustard salmon (since I lacked actual honey mustard), but it amounted to the same thing.  Thanks for the recipe!</description>
